Halloween is one of my favourite times of year – obviously Christmas being number one. I was thinking about what I could do for this blog, and I thought why not honour the northern tradition (proudly a Lancashire tradition too) of making parkin. So here is a quick recipe on how to make some gorgeous Halloween parkin.
15 minutes prep – 1-hour cooking time
Ingredients List:
- 1 Large egg
- 1 tbsp ground ginger
- 100g medium oatmeal
- 200g butter
- 200g golden syrup
- 250g self-rising flour
- 4 tbsp milk
- 85g light soft brown sugar
- 85g treacle
Method:
Pre heat your oven to 160 degrees. Using a bit of butter for greasing, butter a deep square cake tin (circle will be fine if you don’t have one) and line with baking paper.
Beat together the egg and milk with a fork.
Using a large pan, melt together the syrup, treacle, sugar and butter until the sugar has dissolved. Once dissolved, remove the pan from the heat.
Mix together your oatmeal, flour and ginger and stir into the syrup mixture. Then add your egg and milk and stir together.
Pour the mixture into a tin and bake for 50 minutes to an hour depending on whether the cake feels firm and crusty on top.
Leave to cool in the tin, and then wrap in tin foil. Leave this for up to five days before eating. This allows the parkin to become softer and moister.
